Peanut Butter Crack Bars

I am going to keep this one short and sweet.. these bars are crack. They have been on constant repeat in my house. One, because they are so damn tasty. Two, because they are so damn easy. And three, because they are so versatile.

You can switch up the nut butter used, the flavor of chocolate, and even the base. Sometimes ill spice things up and add super-foods to make them even more nutrient-dense (Like maca powder and hemp seeds to the base!) They are beginner-proof and you can’t mess these guys up! Base:

  • 1/4 cup peanuts

  • 1/4 cup peanut butter

  • 1/4 cup raw cacao powder

  • 1 cup unsweetened coconut flakes

  • 1/4 Cup maple syrup

  • 1/4 cup melted coconut oil

In a food processor, add all ingredients and pulse together until a dough forms. Press into the bottom of desired pan and place in freezer while making the next layer.

Peanut Butter Layer:

  • 1/2 cup nut butter

  • 1/4 cup sweetener (maple, honey, etc)

  • 1/4 cup melted coconut oil

Whisk all ingredients together until smooth. Spread evenly over base layer.

Chocolate:

  • 1 1/2 chocolate bars

  • 1 tbsp coconut oil

Melt coconut oil and chocolate together until smooth. Pour over peanut butter layer and place in freezer until set. You can always add more chopped peanuts, sea salt, etc to the top! DEVOUR!
