Raw Vegan Payday Bars

As a serious nut lover, and self-proclaimed nut butter connassouer, I am a sucker for any desert stuffed with them. However, one nutty candy in particular holds a special place in my heart.. the good ol’ PAYDAY. I feel like these are one of those candies that you either love or hate.. But I can’t fully come to terms with how someone could hate the heavenly combination of salted caramel and peanuts and i’m slightly convinced that these people have altered taste buds LOL.

Particularly special to me, because they are my dads favorite. So much so, he would buy a bag when I was a kid and would proceed to hide it in the house so that my little paws wouldn’t steal them. Unfortunately for dad.. this lady was a little Ms. Nancy Drew and could always find my way to these little treats..

I’ve made healthier versions of a series of candy bars (You guys HAVE to try my snickers & pistachio snickers), but couldn’t believe I had never made a raw version of Paydays. So, I got creative in the kitchen and was not only surprised with how good they turned out, but in love with how minimal they are, while tasting like the REAL DEAL. Not the most aesthetically shocking treat ever.. but definitely not lacking in flavor. I hope you love them as much as we do!

You will need:

  • 1 1/2 Tsp Vanilla Extract

  • 1 Tsp Sea Salt

  • 10 medjool dates

  • 1 Tbsp Coconut Oil

  • 2 Tbsp Peanut Butter

  • 2 dropper fulls of liquid stevia (Or 1/4 cup-1/2 cup sweetener of choice. Start with 1/4 and increase after tasting. Maple syrup & honey work. Or Lakanto maple syrup or granulated sugar is a great low-glycemic, low carb option! “DANISHEALTHYEATS” for a discount)

  • 1/2 Cup Peanuts, chopped

  1. Place all ingredients besides chopped peanuts in a food processor. Process until a sticky dough forms.

  2. You can place in the freezer for a couple minutes to make it easier to work with & roll into bite sized pieces if you wish, however I just press the dough into a bread pan to later cut them into bars.

  3. Press chopped peanuts on top of dough (or if you made bite-sized pieces, roll them in the chopped nuts!)

  4. Place in fridge or freezer for a couple hours until hardened/set. Cut into pieces & enjoy!
