Candy Stuffed Fudge
I jut have to start this post by saying, HAPPY EASTER, and I cannot come to terms with the fact that it is already April. I don’t know about you guys, but this year has absolutely flown by in the blink of an eye for me. It feels like yesterday that it was January and the start of the new year. I can be kind of scary to think about! One thing i’ve been working on is slowing down and really appreciating time in general. Life is short and in our modern day people are constantly in hurries, busy, and most of us don’t really ever take the time to stop and smell the damn roses. I think this is so important and often overlooked in terms of self-care and mental sanity! So take time for yourselves this weekend, enjoy all the delicious food and Easter treats, and RELAX!
Now, on to these bad boys… the dreamiest fudge, stuffed with Ocho Organic candy bars, all topped with a super simple 2 ingredient chocolate ganache. Need I say more?! These turned out so cute, so yummy, and perfectly festive for the holiday! And not to mention, how quick and painless they are. Enjoy!
What you will need:
1/2 cup coconut oil
3/4 cup cacao powder (I used navitas)
3/4 cup nut butter of choice (I used cashew butter)
1/3 cup sweetener of choice (I used Lakanto maple syrup danishealthyeats gets you a discount
1 tsp vanilla
Candy bars of choice (I used Ocho)
1/4 tsp Sea salt
Melt coconut oil in microwave or on stovetop. Add the rest of the ingredients to it and whisk until combined. Pour into. prepared pan.
Chop candy bars into small pieces. Spread them randomly into the fudge. Place in the freezer to set.
For the ganache:
1 candy bar of choice (I used Lilys Sweet Chocolate in caramelized & salted)
Thick part of 1 can of Coconut cream
Melt the two together and whisk until smooth. Pour over fudge. Set back in freezer until set. I topped mine with more chopped candies and sea salt. Enjoy!
