Salted Peanut Butter Tahini Cookie Bars
These are one of the easiest treats I’ve made thus far, but is far from lacking on flavor. These are addicting to say the least, chock full of all the best ingredients! All you need is one food processor, a bowl, & you’re good to go! I hope you enjoy these as much as I did!
Base:
1 package of Emmys Organics Peanut butter cookies (or any other raw cookie of the sort)
Blend in a food processor until a sticky dough forms.
Press into the bottom of a parchment lined pan.
Center layer:
1/4 cup tahini
1/4 cup peanut butter (or more tahini)
1/3 cup maple syrup (I used this kind to keep things lower carb/sugar)
1/3 cup melted coconut oil
1 tsp vanilla
1/2 tsp sea salt
Mix all ingredients together until smooth. Pour over top of cookie base. Place in freezer to set.
Chocolate topping:
1 chocolate bar or 3/4 cups chocolate chips
2 tsp coconut oil
Melt coconut oil & chocolate until smooth. Pour over top of tahini layer. Place back in freezer until completely hardened.
