Roasted Cashew, Peanut Butter, & Cacao Crunch Protein Cookie Dough Slice

Okay, okay.. I know this one is a mouthful. But I had to fit all that goodness in the title to try & describe the heaven that is this treat..

ive been on a mission to create higher protein treats, to make protein intake easier to get into ones diet. I have been having quite the success, thank goodness. Maybe too much success, as I CANT STOP WITH THESE. Full of roasted cashews, peanut butter protein, & crunchy cacao nibs, adding a little extra fiber & antioxidants. You guys will love this one! Ingredients:

3 cups roasted Cashews

1 cup Protein Powder (I used peanut butter)

1 cup coconut flour

1 cup melted coconut oil

2 tsp vanilla

1 tsp cinnamon

1/4 cup cacao nibs (optional. Could also add choc chips!)

1 tsp sea salt

1/2 cup sweetener of choice (I used Lakanto monkfruit to keep lower carb. You can click here for a discount!)

1/2 cup maple syrup (this helps hold it together. could also use date paste!)

for the topping:

1 chocolate bar of choice (I used Lily’s sweet chocolate in salted caramel to keep low sugar)

1 tsp coconut oil

  1. Roast the cashews until golden brown. Place in a food processor & pulse until they turn into a fine flour.

  2. Add in the remaining ingredients, besides the protein & coconut flour, and blend until smooth.

  3. Pour into a bowl & add in the protein & coconut flour. You may need to mix it with your hands!

  4. Fold in the cacao nibs if using, and press into a prepared pan.

  5. Melt chocolate bar with 1 tsp coconut oil until smooth. Pour over the slice & place in freezer until set. I like to keep these in the fridge once the chocolate has hardened. Enjoy!
