Hazelnut Fudge Crack Bars

One of my most popular recipes are my peanut butter crack bars. They have “crack” in the name for a reason - because they are addictingly good. They are so quick, easy, and keep in the freezer forever. So honestly, what isn’t to love?

One combination, though, that I may argue tops the chocolate and peanut butter combo, is chocolate and hazelnut. I. AM. ADDICTED. There is something about it, that can’t be beat. I am not sure what has taken me so long to make a variation of the peanut butter crack bars, with hazelnuts, but I am SO happy I did. So I give you - HAZELNUT FUDGE CRACK BARS.

They have a nutty cacao base and are covered in the dreamiest chocolate hazelnut fudge filling. I used JEM Organics Chocolate Hazelnut Butter, which was a dream. It’s rich, luscious, and the flavor is ON POINT. This is hands down my favorite but butter (you can use DANI20 for a discount! Their other flavors are insane as well!) Base:

1/4 cup hazelnuts

1/4 cup hazelnut butter (can sub another nut butter, like cashew)

1/4 cup raw cacao powder

1 cup unsweetened coconut flakes

2 -3 Tbsp sweetener of choice

1 tbsp melted coconut oil

Peanut Butter Layer:

1/2 cup JEM Chocolate Hazelnut Butter

1/4 cup maple syrup

1/4 cup melted coconut oil

Chocolate Ganache:

1 1/2 chocolate bars of choice (1 cup chocolate Chips)

3 tbsp coconut milk (solid part of the can) or coconut oil if you don’t have canned coconut milk!

How to:

  1. In a food processor, add all ingredients and pulse together until a dough forms. Press into the bottom of desired pan and place in freezer while making the next layer.

  2. Whisk all ingredients together until smooth. Spread evenly over base layer.

  3. Melt coconut oil and chocolate together until smooth. Pour over peanut butter layer and place in freezer until set. You can always add more chopped peanuts, sea salt, etc to the top! DEVOUR!
