Caramelized Banana & Toasted Coconut Tarts
For the crust:
1 cup toasted unsweetened shredded coconut
1 cup dates
1/2 cup walnuts
1/2 tsp sea salt
1tsp cinnamon (optional)
1-2 tbsp nut milk if needed
For the filling:
1/2 Cup Big Spoon Roasters Toasted Coconut butter (can sub any nut butter. Cashew is great too!)
1/4 cup coconut sugar
1-2 tbsp maple syrup (if needing it a bit sweeter)
1 sporty banana (can caramelize it before adding!)
1/4 cup canned coconut milk
1 tbsp vanilla
1/2 tsp sea salt
How to:
Combine everything in a food processor, besides the nut milk, until until a sticky dough forms. If your dough isn’t sticking together when you pinch it, add 1 tbsp of nut milk at a time & process, until it does.
Press into the bottom of whatever pan you’re using!
Blend all filling ingredients until completely smooth. Spread over crust.
Place in the fridge to set! & then optional, but highly recommend, topping with coco whip!
