Strawberry Pistachio Fridge Cake

I love this recipe, because it is one that when the sweet tooth hits, and you realize you don’t have any healthy sweets on hand, you can easily whip this up in five minutes and have it ready to be devoured in less than 30. It’s incredibly rich and fudgy and super versatile, so you can add in whatever your favorite things are.

You can sub the cashew butter for your favorite nut/seed butter as well. Have fun with it! I hope you enjoy this fridge cake as much as we do!

No Bake Strawberry Pistachio Fridge Fudge Cake

This is a no-bake vegan and paleo fudge cake! Super fudgy, creamy, and versatile! It's made using just a few ingredients and you can add in all of your favorite things!

Ingredients:

  • 3/4 Cup Coconut Oil
  • 1/2 Cup Cashew Butter
  • 1/2 Cup Cacao Powder
  • 1/2 Cup Maple Syrup
  • 1/2 tsp sea salt
  • 1 tsp vanilla
  • 1/2 cup chopped pistachios
  • 1/3 cup chopped freeze-dried strawberries

Instructions:

  1. In a medium bowl, combine the coconut oil and cashew butter. Melt in the microwave in 20 second increments, stirring in between each one, until completely melted and smooth. Carefully to not over-heat it. You can also do this on the stovetop.
  2. Once smooth, add the cacao powder, maple, sea salt, and vanilla. Stir until completely combined.
  3. Fold in the pistachios and freeze-dried strawberries.
  4. Spread evenly in a parchment lined loaf pan. Place in the freezer/fridge to set.
  5. Once set up, cut into slices and enjoy!
