Peanut Butter, Banana, Chocolate Ganache Bars with Pretzel Crust

Ohhhh man, oh man. i could not WAIT to get this recipe up for you guys because it quite literally is all of my favorite things in one. They are sweet and salty.. they have banana, peanut butter, chocolate, and last but not least.. pretzels.

Those who have been following my journey for awhile now, are familiar with my past with disordered eating before becoming a Holistic Nutritionist. Personally, I avoided carbs like the plague; wouldn’t touch them with a 10ft pole. I couldn’t tell you why.. but I can say, that I believe this was heavily influenced by what I saw on social media.

Everyone on the internet is a “health expert”, knows the perfect diet, and tells you what you should and shouldn’t be eating. Well, friends, there is no one size fits all approach to the “perfect” diet. It all comes with trial and error.

I went years limiting my carb intake and couldn’t tell you how long I went without any sort of refined flour; TOO LONG. Because, this meant avoiding one of the most heavenly snacks.. PRETZELS.

Thank goodness those times have gone! Although I don’t consume pretzels on a daily basis, I love to incorporate them into deserts sometimes, because we all know my obsession with sweet and salty. I chose a gluten free, all-natural version, but feel free to use your favorite brand! I would only recommend trying to avoid pretzels with added preservatives.

The first layer, is the pretzel crust. It’s blended with dates and a little peanut butter, creating the perfect sticky texture. Then, thinly sliced bananas are layered on top. When frozen, it gives it almost an ice cream feel which I LOVE. Then, there is the peanut butter mousse. Have I mentioned my love for peanut butter..? And last but not least, the chocolate ganache. So, ready for this tastebud explosion!? Let’s go!

These have to be one of my favorite treats! Pretzel crust, banana, peanut butter mousse, and chocolate ganache; all the best things on earth! (With paleo options too!)

Ingredients:

Base
  • 1 cup pretzels (Or more peanuts for paleo)
  • 1 cup peanuts
  • 1 1/2 cup dates
  • 3 tbsp peanut butter
  • 2 tbsp maple syrup
  • 1 thinly sliced banana
Peanut Butter Mousse
  • 1/2 cup Peanut Butter
  • 1 tsp vanilla
  • 1/2 cup unsweetened vanilla Almond Milk greek yogurt (I used Kite Hill Brand)
  • 1/3 cup Coconut Cream
  • 1 tsp sea salt
  • 1/3 cup maple syrup 
Chocolate Ganache

Instructions:

  1. Line an 8x8 baking tray with parchment paper. Set aside.
  2. To create the base, add the pretzels to your food processor, processing until a flour-like consistency. A few large chunks are okay. Press into the bottom of your pan.
  3. Thinly slice the banana and evenly layer the slices over the base.
  4. To create the peanut butter mousse, combine all ingredients in your food processor, processing until completely smooth, scraping down the sides as needed. Spread carefully over the bananas.
  5. For the chocolate ganache, combine all ingredients in a microwave-safe bowl. Heat in 20 second increments, stirring well in between, until completely smooth. Pour evenly over the peanut butter layer.
  6. Place in the freezer to set. Once hardened, remove, cut into slices, and enjoy!
