No Bake Chocolate Chip Pretzel Blondies with Chocolate Ganache
No surprise here.. we are back at it with the no bake, sweet and salty, treats! These amazing little bars have a no bake blondie base and are topped with the dreamiest chocolate ganache.
The blondies are made from a mixture of nuts and pretzels, however, if you follow a strict paleo diet, feel free to sub more nuts for the pretzels! I just love the crunch and saltiness that the pretzels add to these, paired with the chocolate!
In regards to substitutions, these are incredibly versatile. You can sub any sort of nuts/seeds for the almonds in the base, as well as for the almond butter. Have fun!
No Bake Chocolate Chip Pretzel Blondies with Chocolate Ganache

No bake blondie base, with pretzels and chocolate chips, topped with the dreamiest chocolate ganache! (With paleo substitutions).
Ingredients:
Blondies
- 1 cup pretzels (Or more peanuts for paleo)
- 1 cup almonds
- 1 1/2 cup dates
- 1/2 cupAlmond Butter
- 2 tbsp maple syrup
- 1/4 tsp sea salt
- 1 tsp vanilla
Topping
- 1 1/2 cups Chocolate Chips
- Solid Part from 1 can Full-Fat Coconut Milk
Instructions:
- Line a loaf pan with parchment paper and set aside.
- Combine all blondie ingredients in a food processor, processing until a sticky dough forms. Press into the bottom of the lined pan.
- Combine the chocolate ganache ingredients in a microwave safe bowl. Heat in 20 second increments, stirring in between, until completely smooth. Spread evenly over the blondie base.
- Place in the freezer to set. Once set, remove, cut into slices, and enjoy!
