Samoa Freezer Cookies
Samoa cookies have always been my favorite! Something about the coconut, caramel, and chocolate combination just cannot be beat! I remember, as a kid, I would open the package with the intent of just having a couple (who am I kidding), only to look down a couple minutes later to realize I put down almost half a thing of them!
Well, these are a fun, healthier, higher protein take on them! They are super quick and easy, versatile (you can sub ingredients for whatever you prefer and/or have on hand), and they are no bake! I opted for a powdered almond butter for the caramel, but you can use the real stuff too (Even more decadent!) These only require a few minutes to throw together, besides the freezer time, as well!
Protein Samoa Cookies

Ingredients:
- 1 cup almond flour
- 1/2 cup oat flour (can sub more almond, if needed)
- 1/2 cup protein powder
- 1/4 cup Creamy Almond Butter
- 1/4 cup maple syrup
- 1/3 cup unsweetened, shredded coconut
- 1/2 tsp vanilla
- 2-3 Tbsp Plant Milk, as needed
- 1/4 cup prepared powdered Almond butter (or regular almond butter)
- 2 tbsp maple syrup
- 1/2 tsp vanilla
- Pinch of Sea Salt
- 1 tbsp Plant Milk, as needed
- 1 1/2 cups chocolate
- 1 tbsp coconut oil
Instructions:
- Line a cookie sheet with parchment paper.
- Combine all base ingredients until a sticky dough forms. Roll into balls and flatten them down with the palm of your hand.
- Mix together the caramel ingredients until completely smooth. You want this mixture to be thick enough that it'll stay in place and not run all over the cookies. Divide it amongst the cookies, sort of frosting it over the tops.
- Melt the chocolate and coconut oil together until smooth. Drizzle over the cookies.
- Place in the freezer until hardened! Enjoy!
