Chewy No bake Cinnamon Caramel Bars
Get ready for a good one you guys.. still on the no-bake train because Washington is confused, and although it’s September, were still sitting in the 80’s over here! So, can’t stop won’t stop! And, not to mention, no bake recipes are just so much easier..
These bars are SO yummy! The base reminds me of cinnamon oatmeal raisin cookies.. like the ones grandma used to make - too good to pass up! Then, they are layered with a cashew butter caramel (although you can sub a seed butter and seeds in the base to keep things nut free!), and covered with chocolate ganache. I am obsessed. Chew Cinnamon Caramel Bars

These no bake bars are full of cinnamon and maple flavors; a match made in heaven! They have a chewy base, are topped with a nut butter caramel, and then covered in chocolate ganache! The perfect treat to have prepped for the week!
Ingredients:
Cookie base
- 1 cup sprouted oats (can sub nuts for paleo)
- 1/2 cup walnuts
- 1/2 cup hemp seeds
- 1/4 cup soft, pitted dates
- 1/4 cup maple syrup
- 1 1/2 tsp cinnamon
Caramel
- 1/2 cup cashew butter
- 1/4 cup maple syrup
- 2-3 tbsp coconut cream
- 1/2 tsp vanilla
- Pinch of sea salt
Chocolate Ganache
- 1 1/4 cups chocolate chips
- 1/3 cup coconut cream (solid part from a can of full-fat coconut milk)
Instructions:
- For the base, combine all ingredients in a food processor until a sticky dough forms. Press into the bottom of a lined loaf pan.
- For the caramel, whisk together all ingredients until completely smooth. Start with 2 tbsp coconut cream at first and add more as needed until you reach a caramel consistency. Spread over the base. Pop the bars in the freezer to harden a bit, about 10-15 mins.
- Melt the chocolate ganache ingredients together until completely smooth and thick. Pour over the caramel layer and return the bars to the freezer until completely firm. Cut into bars and enjoy!
