Payday Bars
Growing up, my dads favorite candy bars were paydays. He would always have a hidden stash, so of course, I grew up loving them. My brother and I would literally spend way too much time trying to find them around the house LOL. But, what isn’t to love? They are sweet from the caramel, salty from the peanuts, require no baking, and are dangerously good. This healthier version is made using whole-food ingredients and are way lower in sugar than the original, but don’t be fooled - they taste just as good as the original! I hope you enjoy!
Payday Candy Bars

These no bake bars remind me of the classic payday bar - an amazing combination of sweet caramel and salty peanuts - so hard to resist! They come together incredibly quickly and you don't even need a food processor!
Ingredients

- 1 1/2 cups chopped peanuts
- ½ cup peanut butter
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- ½ tsp vanilla
- ½ tsp sea salt
Instructions
- Line a loaf pan with parchment paper & Sprinkle half of the peanuts in a single layer on the bottom.Combine the remaining ingredients (besides peanuts) together, stirring until the mixture is smooth & has thickened.Gently spread over the bottom peanut layer. Top with remaining chopped nuts (I gently press them into the mixture slightly, to ensure they stick!)Place in the freezer to harden, then remove, cut into bars, and enjoy!Note: I keep these stored in the freezer as they’re the perfect gooey caramel texture!
