Raspberry Lemon Luna Bars

These bars are so delicious, come together quickly, are made with whole food ingredients, and super versatile - so you can make them using all of your favorite ingredients! They make the perfect grab and go snack!
Ingredients
- 1 1/2 cups nuts/seeds of choice
- 1 1/4 cups dates
- 2 tbsp golden syrup or maple syrup - optional
- zest from 1/2 lemon
- Juice from 1 lemon
- Pinch of Sea Salt
- 1 tsp vanilla
- 1/2 cup unsweetened raspberry chia jam
- 1 cup Vegan White Chocolate - Optional
Instructions
- Add everything but the jam to a food processor, processing until a sticky dough forms.
- Press into the bottom of a lined loaf pan.
- Spread the jam evenly over the base.
- Place in the freezer to Harden, 1-2 hours.
- If using white chocolate, melt until smooth.
- Remove the pan from the freezer and cut them into bars. Dip or drizzle each one. Return back to the freezer to allow the chocolate to firm up.
