These almond joy freezer bars are the perfect healthy snack or on the go breakfast! Full of healthy fats, protein, and fiber - and not to mention how easy and tasty they are!

Ingredients

  • 3/4  cup rolled oats
  • 1 cup crispy cereal - can sub more oats. I used a paleo cereal
  • 1/2 cup sliced almonds
  • 1/2 cup unsweetened shredded coconut
  • 1 tbsp flax seeds
  • 1 Tbsp chia seeds
  • 1/4 cup melted coconut oil
  • 1/2 cup almond butter
  • 1/3 cup maple syrup
  • 1/2 tsp vanilla + 1/2 tsp almond extract
  • Pinch of Sea Salt
  • 1 cup chocolate chips

Instructions

  1. Line an 8-inch pan with parchment paper.
  2. In a large bowl, stir together the oats, cereal,  almonds, coconut, sea salt, and  seeds.
  3. Combine the remaining ingredients until completely smooth.
  4. Pour wet mixture over dry and stir well until thoroughly combined. 
  5. Press into the pan and place in the freezer to Harden. Cut into bars.
  6. You can either melt your chocolate and drizzle over top or add the chocolate chips into the actual bars!
  7. Note: These have to stay in the freezer to hold together!
