These nut and seed bars are packed full of good-for-you ingredients! Made even better - they're super easy to make and versatile, so you can add in all your favorite things! Stash them in the freezer for a healthy snack or on the go breaky!

Ingredients

  • 1 1/2 cups toasted mixed nuts/seeds/coconut flakes
  • 1 tbsp each - ground flaxseed, chia, and hemp hearts
  • 1/3 cup maple syrup
  • 3 tbsp monkfruit or coconut sugar + 3 tbsp water
  • 1 tsp vanilla
  • Pinch of sea salt
  • 1/2 tsp cinnamon
  • 1 tsp maca powder (optional)
  • 1 cup chocolate chips

Instructions

  1. Toast your desired nuts/seeds/coconut.
  2. Add to a large bowl and drizzle with 1 tsp of melted coconut oil or olive oil. Toss.
  3. Line a loaf pan with parchment paper.
  4. Over medium heat, in a small saucepan, add the maple syrup, water, monkfruit, vanilla, and sea salt. Brint to a boil, whisking constantly, for 2-3 minutes, until it begins to thicken/reduce and become sticky. 
  5. Pour this mixture over the nuts and seeds and mix well. Immediately pour the mixture into the lined loaf pan.
  6. Place in the freezer to harden.
  7. Melt the chocolate until smooth. Remove the panfrom the freezer and cut into bars. Dip each one or drizzle the chocolate over the top. Return to freezer until the chocolate has hardened. Enjoy!
  8. Note: Store in the fridge/freezer.
