Chia Pudding with homemade Apple Juice Caramel Sauce

I have a new obsession you guys - North Coast Organic Apple Juice.

I’ve always been aware of quality and ingredients when it comes to purchasing juice, but was never one to really tell the difference between different brands. That all changed when I tried this juice.. you could literally taste the quality - it was unlike any other juice I’ve had. It’s crisp, so flavorful, and perfectly sweet.

Often times, during evaporation processes, juices lose their flavor and nutrients. Because of this, artificial flavors and additives are added to make up for it. But North Coast Organic juices are never from concentrates. They only use apples organically grown in the USA and ensure sustainable farming practices - all of which, in my opinion, is so important to look into when supporting companies.

We were drinking this by the glass but I wanted to share a fun recipe using it! I ended up making some chia pudding and wanted a caramel to go along with it - apple juice caramel was born. You just boil the apple juice until it starts to caramelize and you’re done! You can use it on ice cream, dip fruit in it.. the possibilities are endless! Chia Pudding with homemade Apple Juice Caramel Sauce

Full of protein & good for you ingredients, this no bake recipe is a freezer staple for us!

Ingredients

Chia pudding
  • 1 1/2 cups milk of choice
  • 1/4 cup North Coast Organic Apple Juice
  • ¼ cup chia seeds
  • 1 tbsp flax seeds
  • 1 tsp cinnamon + 1 tsp vanilla
  • 2 tbsp almond butter
  • 2 tbsp sweetener of choice
Apple Caramel Sauce
  • 2 cups North Coast Organic Apple Juice
  • 3 tbsp coconut sugar
  • 1 tbsp vegan butter or coconut oil

Instructions

  1. To make the chia pudding, add all the ingredients to a blender.
  2. Divide the pudding into jars and pop in the fridge to set up!
  3. To make the caramel, combine the apple juice and coconut sugar in a small saucepan.
  4. Bring to a boil, then reduce to a simmer. Let the mixture simmer for 20-30 minutes (time varies) until it reduces and thicken to an almost honey-like texture.
  5. Remove from the heat & let cool few minutes, then stir in the butter/oil.
  6. Store in a mason jar in the fridge and gently warm before using!
