2 Ingredient Chocolate Mousse

I don’t know what it is, but chocolate mousse feels so nostalgic to me. I’m absolutely obsessed with it. It’s easy to make, versatile, decadent - everything a dessert should be. And what if I told you, you could make decadent chocolate mousse using the liquid from a can of chickpeas? Hear me out! I know It might sound weird, but the aquafaba (chickpea water) can be whipped just like egg whites, making it a great plant-based alternative as well! You just beat it until stiff peaks form, fold in melted chocolate, and let it set!
There are a MILLION kitchen gadgets out there, but if you don’t have a good hand mixer, you’re missing out! Not to be dramatic, but I recently got one that changed my (and about to be your) life! Who needs an expensive stand mixer? ;) I was honestly super impressed at how powerful it was (it has 7 different speed settings), because hand mixers I’ve used in the past have felt flimsy and would constantly seize up when i’d try and mix doughs. But best part, in my opinion, is that they are SO easy to clean, because let’s be real.. more time eating mousse > doing dishes.

Now, onto the mousse! You will need:
Aquafaba: The liquid from canned chickpeas. You will just drain the liquid into a large bowl and you’re ready to go!
Chocolate Chips: Use your favorite brand! This is what gives the mousse it’s flavor so you will want to make sure it’s chocolate you LOVE.
Sea salt: Sea salt and chocolate is iconic. This gives it the perfect touch!
Vanilla: You can omit the vanilla if you’re not a fan, but I think it really elevates the mousse!
Any other additional add-ins: Peanut butter, chopped nuts, flavors/seasonings are all great additions to spice the mousse up!
How to make Chocolate Mousse:
You simply start by busting out your Hamilton Beach® Professional Hand Mixer and go to down! You’ll beat the aquafaba until stiff peaks form - which can take awhile, be patient! You’ll want to make sure you use a steel or glass bowl though, as with plastic and others, oil can build up around the bowl which can cause the aquafaba to not whip as well!
Melt the chocolate until smooth. You’ll want to let the chocolate set aside for awhile, until it’s not warm to touch. If it’s warm, it’ll create a grainy mousse or harden when you’re mixing it in.
Fold the cooled chocolate into the whipped aquafaba. It’ll loose a little heigh/airiness but that’s okay! Once it’s all mixed, fold in the sea salt and vanilla or any other ingredient’s you’ll be using. Divide amongst your jars and set in the fridge to firm up! Top with vanilla coconut yogurt, fresh berries, or even some coconut whip! Enjoy!
2 Ingredient Chocolate Mousse

Ingredients
- Liquid from 1 can of chickpeas
- 5oz chocolate, of choice
- 1 tsp vanilla
- pinch of sea salt
Instructions
- Melt the chocolate until smooth and set aside to bring it to too temp.
- Drain the liquid from the chickpeas to a large glass or steel bowl. Using a hand mixer, beat the liquid until stiff peaks form. Be patient, this can take awhile!
- One the chocolate is at room temp, slowly drizzle it into the mousse, folding it in. The mousse will loose some height, that's okay! Fold in the vanilla and salt if using.
- Divide amongst jars and add any toppings you'd like. I layered mine with coconut yogurt and strawberries.
- Place in the fridge until ready to eat. Enjoy!
