This nut-free Twix bar has a cookie shortbread base, ooey gooey sunbutter caramel center, all topped In chocolate! They are truly one of the best sweet treats!

Ingredients

Shortbread
  • 1 1/2 cups raw sunflower seeds
  • 1/4 cup melted coconut oil or avocado oil
  • 4 tbsp maple syrup
  • pinch of sea salt
Caramel:
  • 1/2 cup sunbutter or tahini
  • 1/4 cup coconut oil
  • 1 tsp vanilla
  • 1/4 cup maple syrup
  • pinch sea salt
Chocolate Topping
  • 1 1/4 cups chocolate
  • 2 tsp coconut oil

Instructions

  1. Add the sunflower seeds to a food processor, processing for a few seconds until they have began to break down. Then add the remaining base ingredients and process until a sticky dough forms. I like when there's some whole seeds left for extra crunch!
  2. Press this mixture into a lined loaf pan.
  3. To make the caramel, combine everything until Smooth. Pour over the base.
  4. Melt the chocolate and coconut oil together until smooth. Pour over the caramel layer, tilting the pan to ensure the chocolate covers the caramel layer entirely. Place in the freezer for at least 2 hours to firm up. Then cut into bars and enjoy!
