High Protein Cheesecake Jars

These cheesecake layers are a super easy, high protein, yummy treat! There's a cookie crumb base, creamy cheesecake layer, topped with jam! They are paleo, gluten-free, & vegan too!
Ingredients
Base
- 2-3 cookies or graham crackers of choice (I used Simple Mills)
- 1 tbsp melted oil or vegan butter
- Splash of milk, if needed
Cheesecake filling
- 3/4 cup yogurt of choice (I used unsweetened vanilla coconut yogurt)
- 1-2 tbsp cashew or almond butter (can omit)
- 2 tbsp protein powder (use your favorite tasting one!)
- 1-2 tbsp maple syrup (if needed)
- unsweetened Jam, for topping
Instructions
- Crust: Crush the cookies and using a fork, mix in the melted oil/butter, until crumbs form. If it's too dry, add a tiny splash of milk. Add to the bottom of your jar.
- Filling: Mix everything but the jam together until completely smooth. If you're using protein powder and it makes the mixture super thick, stir in 1-2 tbsp milk until a creamier texture forms. Taste & adjust as you'd like. Add to the jar, over the crumb base.
- Top with a layer of jelly and place in the fridge until ready to eat. Enjoy!
