Paleo Stuffing
This stuff is SO GOOD.

Just kidding, I won’t leave you that quickly ;) However, I don’t have much to say about this cast iron of goodness, besides just that. ITS SO GOOD. I have always been a huge fan of stuffing, but it never makes me feel great. When I switched my diet to a more paleo approach, I knew one thing I NEEDED to master was stuffing. And not to toot my own horn, but I think i’ve done just that. I made this at Thanksgiving and had so many friends and family members asking me for the recipe. Which is quite shocking, as I don’t have the most health-conscious fam. So I think that speaks for itself. This stuffing is made from minimal ingredients, in one pan, and is super fool-proof. Ingredients:
1 tbsp fourth & heart ghee
1 cup mushrooms, chopped
2 cups chopped celery
2 cups almond flour
3 whisked eggs
1 tbsp minced garlic
2 cups chopped apples
3 cups chopped onion
Sea salt & pepper
1/4 cup unsweetened cranberries
1/2 cup fresh parsley
1 1/2 tbsp poultry seasoning
1 Tbsp nutritional Yeast (optional)
In a cast iron skillet, melt 2 tbsp ghee. Add in onion, mushroom, celery, apples, cranberry, and parsley, and seasonings and saute until soft, about 8 minutes.
Remove from heat and stir in the almond flour until well combined. Then add in whisked eggs and mix once more. I usually use a wooden spoon and flatten the mixture evenly.
Place in oven at 375F for 45-1 hour or until top is golden brown. Enjoy!
