One Pot Golden Rice & Beans

I don’t know about you guys, but I love an easy, one-pan, sorta meal. We all live such busy lives and the most common thing I hear from clients about their diet, is how difficult it can be when they have so much going on, on a day to day basis. We have our families and friends, our jobs, our hobbies, and sometimes the last thing we want to do is slave away over a hot stove for a couple hours to put food on the table.

Well, don’t fear! I have been trying to verse myself in meal ideas that are not only nourishing, but quick and painless, and that are sure to please the entire family. I was recently gifted a cookbook, “How Not to Die Cookbook”, and have quickly fell in love with it. It offers a wide variety of different meal ideas from breakfast to dinner, to smoothies and desserts. One recipe was quickly pointed out by my boyfriend, because it reminded him of childhood comfort food; cheesy broccoli & rice. Who doesn’t love that classic. So I decide to put my own spin on this recipe with a little inspiration from this cookbook and it turned out SO GOOD. I hope you enjoy!

Golden Rice & Beans

Ingredients:

  • 1 large onion

  • 2 tsp white miso paste

  • 1 tsp ginger (fresh or ground)

  • 2 1/2 Tbsp nutritional yeast

  • 1 tsp turmeric

  • 1/2 tsp black pepper

  • 1/2 tsp cumin

  • 1/8 tsp cayenne

  • 2 1/2 cups veggie broth

  • 1 Cup long grain brown rice

  • 3 cups broccoli

  • 3/4 cups each black beans & white beans (or use one or the other, I just like the mix)

  • Vegan cheese (optional)

In a large cast iron skillet, sauté onion in 1-2 tbsp of water (or olive oil or ghee) for about a minute. Mix in the spices, miso, rice, and nutritional yeast and stir until well combined. Stir in the veggie broth and bring to a boil. Reduce to a simmer, cover the skillet, and cook for 30-45 minutes, stirring occasionally, until the rice is tender.

Stir in the broccoli. You can add a little extra broth if needed (I ended up adding 1/2 cup more). Cook for about 10 minutes longer until the broth is absorbed and broccoli is tender. Stir in the beans and remove from heat. We topped our with a little vegan cheese and it was SO GOOD!
