Single Serve Spinach & Artichoke Dip
I think the reason I don’t typically share a ton of savory recipes, is because i’m not much of a “recipe” gal, when it comes to cooking.. Sure, I have an idea of the “base” of my dish, but tend to just throw in seasonings and taste as I go - hoping for the best! That’s kind of what was going on with these - I highly recommend tasting and adjusting the flavors and seasonings to your preferences as you go along! These are absolutely delish and the perfect little appetizer, game day snack, or just an anytime snack, really. They are great with crackers, chips, veggies, and just straight up with a spoon! Spinach & Artichoke Dip

Yield: 3 single serve ramekins
These fun single serve spinach and artichoke dips come together so quickly and are the perfect appetizer, game day snack, or pre-game dinner - especially if you don't want to share! ;)
Ingredients
- 1 cup soaked cashews
- 1/2 cup white northern beans (or more cashews for strict paleo)
- 4 cloves garlic
- 1 diced onion
- 1 1/4 cups plant milk
- 1/4 cup nutritional yeast
- Juice from 1 small lemon
- 1 1/4 teaspoons salt
- 4 cups fresh spinach
- 2 14-ounce cans artichokes, drained & rinsed
- Hot sauce (optional but I love!)
- Vegan parm & your choice of bread crumbs if desired!
Instructions
- Preheat oven to 400F.
- Saute the onion until almost translucent. Then add half of it to a blender with the remaining ingredients (besides the spinach, artichoke, & breadcrumbs) and blend until super smooth.
- Add the spinach & artichoke to the onions remaining in the pan & cook 2-3 minutes. Pour in the sauce & cook another 3-4 minutes, or until heated through.
- Divide the mixture amongst single serve ramekins or in one large pan.
- Top with vegan parmesan & choice of breadcrumbs, if desired, & Place in the oven until the tops are bubbly & golden.
- Remove & serve with your favorite dip vessel!
