Vegan Greek Seitan Skewers with Tofu Feta

I have been trying to set up my savory meal game.. I’ve always loved cooking, but have always been better at baking. Something about creating sweet treats just brings me so much damn joy.. but, as of late, I’ve really been loving experimenting in the kitchen. My only rule - it has to be quick and simple!

Enter.. these kebabs! Kebabs are a summer grilling staple, but we like to make them all year round. I love how quick and easy they are and I love that you can use whatever you have in your fridge. The ones I’m sharing today are vegan gyro seitan kebabs. Seitan is a great vegan source of protein, and when prepared just right, can literally taste like meat - it’s nuts!

Just layer your protein of choice with some veggies and either grill or bake them up! Add a few sides (we love fresh salad or rice) and serve them up with a yummy sauce! You’re done!

The below recipes will feature how I made the tofu feta and the seitan. Enjoy!

Tofu Feta:

  • 1 package of extra firm tofu (400 g)

  • 2 tbsp white miso

  • 1 lemon, juice

  • ¼ cup apple cider vinegar

  • 1 tbsp olive oil

  • 3 tbsp water

  • 2 tbsp nutritional yeast

  • 1 tbsp oregano (optional)

  • ½ tsp garlic powder

  • ½ tsp salt

  • black pepper

  • red pepper flakes (optional)

    1. Combine all ingredients besides tofu in a deep bowl. Whisk until thoroughly combined.

    2. Press & drain tofu. Cut into cubes. Place in the tray with the marinade and toss so all the pieces are coated.

    3. cover & refrigerate until ready to use!

Seitan “meat”:

  • 1⁄4 tsp sea salt

  • 1⁄4 cup Chopped red onion

  • 1 garlic clove, minced 

  • 1 tsp  basil

  • 1 tsp  oregano

  • 1⁄2 tsp  black pepper

  • 1 tbsp sesame oil

  • 1 tbsp tahini

  • 1 tbsp liquid aminos

  • 2  tbsp paleo ketchup

  • 1  tsp Liquid smoke

  • 3⁄4 cup water or broth

  • 1 1⁄4 cups vital wheat gluten

  1. Combine all ingredients, besides gluten, in a food processor, processing until smooth.

  2. Add the gluten to a large bowl and mix in the wet mixture until your dough forms.

  3. Roll into a log and cover with foil.

  4. Bake for 60 min, making sure to flip over at the 30minute mark.

  5. Remove from the oven and allow to cool. Then slice as desired.
