Kimchi Fried Cauli-Rice

Another weeknight staple - Kimchi Fried Cauli Rice. Super quick and easy, can be made using any protein you prefer (I used Tofu here), and can be made with rice, quinoa, cauliflower rice, or whatever “grain” you like!

As for veggies, use whatever you like! That is what makes recipes like these the best - you can use whatever you want and it’ll always end up good!

Pictured here was a mixture of regular rice and cauliflower rice, but as I mentioned previously, it turns out amazing with either-or (and quinoa as well!) Just saute up your veggies of choice, add in your cauli-rice or grain, cook it up, add your protein, and you’re done!

This super versatile, quick, and easy recipe is the perfect weeknight meal! You can use whatever veggies and protein you have on hand and switch up the base (Cauli rice, regular rice, quinoa - it's all great!)

Ingredients:

  • 2 cups riced cauliflower (or grain of choice)
  • 1/2 onion, diced
  • 3 cloves garlic
  • 1/2 cup shelled edamame 
  • 1/2 zucchini, diced
  • 1/4 cup corn (optional)
  • A few Radish, sliced
  • 1/4 cup shredded red cabbage
  • 1 cup kimchi
  • 2 tablespoons kimchi juice (from the jar of kimchi)
  • 1/4 cup liquid aminos
  • 1/4 cup green onions, sliced
  • salt & pepper to taste
  • 1-2 tbsp sriracha (optional)
  • Cilantro, to serve
  • Avocado oil spray (or regular oil)

Instructions:

  1. Grease a large pan with avocado oil spray (or regular oil) over medium heat.
  2. Add the onion to the pan and cook until slightly tender. Add the zucchini and corn and stir; cooking for a few minutes, until vegetables are tender. Then, add the garlic.
  3. Add the edamame,  kimchi, and kimchi juice. Stir to combine and continue cooking until all vegetables are heated through. Add the riced cauliflower or whatever grain you are using.
  4. Give everything a good mix and cook for another 3-5 minutes, until the rice is heated through. Add soy sauce, sliced radish, and red cabbage, and give everything one last good mix.
  5. Serve, topping with cilantro, sriracha, green onion, and protein of choice! Enjoy!
