Mexican Tofu Scramble
Tofu scramble is one of my all-time favorite meals. I could honestly have it any time of the day. Combine that with some mexican flare and we have a win-win in my book. When does Mexican not sound good?
Again, use whatever vegetables YOU love. I did create this as a single-serve recipe, but if you need more than a serving of tofu, by all means - ADD MORE. Just taste and adjust the seasonings as needed! I love topping mine with cilantro, microgreens, avocado, and lime. SO GOOD.
All you do is saute your veggies of choice, add in the tofu, scramble it up, season, and you’re done! Easy peasy meal that totally satisfies!
Totally optional, but highly recommend having this with some waffles, because.. what is breakfast without waffs! Enjoy!

This Mexican tofu scramble comes together so quickly and is full of veggies, protein, and healthy fats to start the day off right!
Ingredients:
- 1 Serving Firm Organic Tofu
- 1/2 tbsp Extra Virgin Olive Oil (Optional)
- 1/4 bell pepper, chopped
- 3 tbsp Chopped Onion
- 3 Tbsp salsa
- 1/4 teaspoon cumin powder
- 1/4 tsp chili powder
- 1 Tbsp Nutritional Yeast
- 1/8 teaspoon turmeric powder
- Black Beans (optional)
- Salt & Pepper, to taste
- 1 tablespoon hot sauce (Optional)
- Cilantro, finely chopped
- Lime wedges & Sliced Avocado (optional)
- Other add-ins: Zucchini, corn, taco sauce, etc.
Instructions:
- Add the olive oil to a pan with the chopped onion. Cook for a couple minutes until tender. Then, add in the remaining vegetables you are wanting to use along with the salsa. Cook for another minute or two.
- Add the tofu to the pan, crumbling it up. I usually use a wooden spoon to break it up!
- Add the seasonings and hot sauce and continue to cook, until the tofu has started to golden.
- Taste, adjust seasoning as needed. Remove from the heat. Stir in the cilantro and top with avocado. Enjoy!
