Sunflower Hemp Falafel

These falafel bites are super easy, nutrient dense, and full of flavor! They can be air fried or baked and keep great in the fridge! Perfect to top on grain bowls, salads, or just dipped in hummus as a snack!

Ingredients

  • 3/4 cup Great Northern Beans (Or chickpeas - can sub more seeds for paleo)
  • 1/2 cup sunflower seeds
  • 1/4 cup hemp seeds
  • 3 tbsp tahini
  • 1 bunch parsley
  • 4 cloves garlic
  • 1 tbsp cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp sea salt + 1/4 tsp pepper
  • 1/4 cup nutritional yeast
  • 2 tbsp lemon juice

Instructions

  1. In a food processor, combine the sunflower and hemp seeds. Process for a minute or so and then add the beans. Process again until it starts becoming a paste (just another minute or so).
  2. Add in the remaining ingredients, processing again until everything is well mixed. Adjust seasonings as needed (add anything you like!) but remember it'll have a little bit of a different flavor once baked.
  3. Line your air fryer with parchment paper.  Drop spoonfulls onto the paper, flattening them out, forming them into a flat circle. Air fry on 325, for 8 minutes and then flip, cooking on the other side until crispy around the edges. Different air fryers yield different results, so just keep an eye on them.
  4. If you're baking them, bake on 325F for 20 minutes, flipping half way, or until golden and done.
  5. Pair with your favorite tahini sauce, tzatziki, or hummus!
