Baked Pizza Cauliflower Bites

These are a perfect side dish, healthy snack, or even a fun appetizer! They are SO easy, minimal ingredients, and a tasty way to get veggies in!
Ingredients
- 1 medium head of Cauliflower
- 1/2 cup cheese of choice (I used a high-quality vegan cheese)
- 1 cup pizza sauce (store-bought or homemade)
- dried herbs & spices (I used mixed dried herbs, nutritional yeast, salt & pepper, & garlic)
- 2-3 tbsp olive oil
Instructions
- Preheat the oven to 400F.
- Cut the cauliflower into smaller florets. Add them to a large bowl.
- Drizzle the olive oil over the cauliflower, using a little more if your head was a larger one. Give them a toss, making sure they are all coated.
- Then add the seasonings and herbs. Toss again. Bake, tossing every 15 minutes, until the florets are fork-tender. Remove from the oven.
- Drizzle the sauce over the cauliflower, making sure they are all coated. Then sprinkle the cheese over the top. Turn the oven to broil and return the cauliflower to the oven until the cheese has melted.
- Serve immediately!
