Breakfast Tortilla Cups
These are my new favorite breakfast! Perfect for on the go or when you’re in that “i need to clean out the fridge” stage of the week. You just cook your protein of choice, saute up your favorite veggies, cut your tortillas, press them into the pan, and bake! Then you get to have some fun and top them with all your favorite things - cilantro, guac, and pico are non-negotiables for me!

I have been in love with these! They're versatile - so the perfect clean out the fridge meal - and so perfect for on the go or a fun switch-up from your typical breakfast!
Ingredients
- 3-4 Large tortillas
- Fillings of choice:
- 1 package tempeh, cooked to liking
- 1/2 onion
- veggies of choice
- Spices: garlic, chili lime, cumin, nutritional yeast, oregano
- Pico, guac, vegan cheese
Instructions
- Cook your protein to your liking. I like to crumble of tempeh and cook it on the stovetop in a bit of salsa.
- Saute your veggies until almost done to your liking.
- Cut your tortillas into fourths, gently pressing them into the bottoms of a cupcake tin.
- Fill the cups with your protein/fillings. Top with cheese, if using.
- Bake at 350 for 18-20 minutes, until golden.
- Remove from the oven. Top with pico, guac, and fresh cilantro, Enjoy!
