Buffalo Tofu with EBTB Tahini Ranch

This salad has been on repeat with the nicer weather! I can’t decide if I like the buffalo tofu or the tahini ranch more, but safe to say i am OBSESSED. I can’t stop making it! Such an awesome flavor combo. I promise you’ll want to be dipping everything in this dressing!
Ingredients
Tofu
- 1 Package Tofu, drained & pressed
- 1/4 cup tapioca flour
- 1-2 tbsp olive oil (or spray)
- 2 tsp garlic powder
- 1/3 cup Buffalo Sauce (I used Primal Kitchens Paleo Sauce)
- 2 tbsp Nutritional Yeast (optional)
- Salt & Pepper, to taste
Ranch
- 1/4 cup tahini
- 1/4 cup lemon
- 1 tsp garlic powder + onion powder
- 1/2 tbsp each of dried chives + dried dill
- 3 tbsp nutritional yeast
- 1 tbsp dijon
- 1/2 tbsp Everything But the Bagel seasoning
- Salt & pepper to taste
- 1/4 cup Water to thin, as needed
Instructions
Tofu
- After pressing and draining the tofu, cut into cubes.
- Add it to a large bowl and drizzle over the olive oil (or spray using avocado/olive oil spray). Sprinkle over the nutritional yeast, garlic, salt, and pepper. Toss.
- Then sprinkle over half of the tapioca flour, give it a good toss, and add the remaining.
- Air fry or bake on 375F until crispy, tossing every so often.
Ranch
- Combine all ingredients until smooth. Taste and adjust as desired.
