These are so yummy, the perfect meal prep, and so versatile! One of my favorite breakfast/snacks!
Ingredients
- 1 ¾ cups chickpea flour
- 2 cups water
- 1 tsp baking powder
- 1 tbsp olive oil
- Then add in whatever seasonings & add-ins you like. I did:
- ¼ cup nutritional yeast
- 2 tsp garlic powder
- 2 tsp dried herbs
- Cumin, sea salt & pepper, & red pepper flakes
Instructions
- Mix everything together until combined. It should be pretty watery - that’s okay! Then add in your favorite veggies!
- Divide the mixture amongst a lined cupcake tin.
- Bake at 375F for 35-45 minutes.
- Note: time always varies. They’re done when they are cooked through & a little springy. Don’t over cook! let cool & enjoy!
