These are so yummy, the perfect meal prep, and so versatile! One of my favorite breakfast/snacks!

Ingredients

  • 1 ¾ cups chickpea flour
  • 2 cups water
  • 1 tsp baking powder
  • 1 tbsp olive oil
  • Then add in whatever seasonings & add-ins you like. I did:
  • ¼ cup nutritional yeast
  • 2 tsp garlic powder
  • 2 tsp dried herbs
  • Cumin, sea salt & pepper, & red pepper flakes

Instructions

  1. Mix everything together until combined. It should be pretty watery - that’s okay! Then add in your favorite veggies!
  2. Divide the mixture amongst a lined cupcake tin.
  3. Bake at 375F for 35-45 minutes.
  4. Note: time always varies. They’re done when they are cooked through & a little springy. Don’t over cook! let cool & enjoy!
