These tempeh sausages actually come together so quickly and are so tasty and versatile - you can use them anywhere you would use regular sausage patties!

Ingredients

  • 8 ounce package of Tempeh
  • 1/4 yellow onion, diced
  • 2 tsp garlic powder or 4 cloves, chopped
  • 1 tbsp nutritional yeast
  • 1 tsp maple syrup
  • 1/2 tsp sea salt
  • 1 tsp pepper
  • 1 1/2 tsp each thyme and sage
  • 1 1/2 tsp smoked paprika
  • 2 tbsp herbs (rosemary, oregano)
  • 2 Tbsp vegan worcestershire sauce (can omit)
  • 1 Tbsp Olive Oil

Instructions

  1. Crumble the tempeh into a large bowl. Combine all ingredients and mix well until a crumble/sausage texture forms. 
  2. You can taste the mixture and adjust as needed. For optimal flavor, allow the mixture to sit in the fridge for an hour or two to marinate.
  3. When ready to cook, preheat your oven to 375F. Drop spoonfuls of the mixture onto a lined baking sheet. Bake for 20 minutes, flip, and bake for 10-15 more, until golden.
  4. Remove from the oven and allow to cool. Serve on a breakfast sandwich, alongside a scramble, or any other way you would enjoy regular sausage!
