Vegan Buffalo Cheesy Rice Stuffed Jalapenos

This is such a fun app or snack to share with friends! They come together super quickly and are secretly packed with veg!
Ingredients
Queso
- 1 cup boiled/steamed potato (I used Japanese sweet potato)
- 1/2 cup boiled/steamed carrots
- 1/4 cup nutritional yeast
- 3 1/2 tbsp olive oil + 1/2 tbsp lemon juice
- 2 tsp garlic powder + 1 tsp onion powder
- 2 tsp Dijon + salt & pepper to taste
- 1 tbsp Buffalo sauce
Jalepnos
- 6 jalapeños
- 1/2 bag Palmini Hearts of Palm Rice OR regular rice, cauliflower rice, etc.
- 1/4 cup queso, from above OR favorite store-bought version
- 3 tbsp finely chopped onion
- 3 tbsp hemp seeds - optional
- 1 tbsp buffalo sauce
- Crumb topping:
- 1/4 cup sunflower seeds
- 1/4 cup almond flour
- Herbs & spices of choice
- (Or use your fave store bought brand!)
Instructions
- 0Blitz all of the crumb topping ingredients together until it resembles breadcrumbs. Set aside.
- Blend all of the queso ingredients together until completely smooth. Taste and adjust as needed.
- Half the Jalapenos.
- Mix together the rice, queso, and chopped onions. You can also add anything else you desire!.
- Top with some of the crumb mixture.
- Air fry or bake on 400F until golden and crisp to your liking. Eat right away!
