Tofu Peanut Satay Skewers

Tofu Peanut Satay Skewers

These skewers make such a tasty and quick dinner! I love making extra to have for the next day too! Pair them with your favorite greens and grains and you're all set!

Ingredients

Peanut Sauce
  • 1/4 cup runny peanut butter
  • 2 tbsp liquid aminos or coconut aminos
  • 1 tbsp monk fruit or maple syrup
  • 2 tsp sesame oil
  • 1 tbsp lime juice
  • Pinch of ground ginger, optional
  • 2 tsp sriracha or chili sauce
  • 3 tbsp water, to thin
Tofu
  • 1 package extra-firm tofu
  • 1 tsp coconut aminos
  • 1 tsp garlic powder
  • 1 tsp red chili flakes
  • 2 tsp olive oil
  • 1 tbsp tapioca flour - can sub arrowroot or cornstarch
  • 1 tbsp flax seeds, optional
Salad
  • Greens of choice - i used massaged kale here
  • rice of choice - I used hearts of palm rice but also love cauliflower rice for another paleo options
  • chopped onion, green onion
  • any other add-ins of your choice

Instructions

  1. Press your tofu to drain excess water. Cut into cubes and add them to a large bowl.
  2. Add the coconut aminos, chili, and olive oil and give it a good toss. Then, in another bowl, add the tapioca flour, garlic, and flax, if using. Roll each piece in the dry mixture and place on a skewer, or lined cookie sheet, or just in your air fryer.
  3. Air fry or bake on 400F for 30-35 minutes, flipping half-way through, until crispy to your liking.
  4. While the tofu is cooking, combine all of the peanut sauce ingredients together in a bowl, whisking until smooth. Taste and adjust as desired.
  5. Assemble your salad with your grains, greens, and whatever else you'd like to add. Once the tofu is done, add to your bowl. Serve with the side of peanut sauce. Enjoy!
