Raw Vegan Ferrero Rocher
I don’t have much to say about these, other than they are bites of absolute heaven. I know it can be hard around the holidays, with all of the treats, cookies, and candy laying around. For me, particularly, it’s hard to stay from those little chocolate hazelnut balls of goodness. They just melt in your mouth, have the perfect crunch, and I don’t think there’s a better combination than hazelnut and cocoa. However, I try and stay away from processed forms of sugar as much as I can. I definitely think we should indulge and treat ourselves around the holidays with our family and friends, but if you can have something that is healthy, and tastes as good as the original, why not!? It is the best of both worlds. These don’t take long to whip up and they don’t last long either.. so enjoy while you can! Happy holidays!
For the “Rawtella”
1 cup hazelnuts
3 Tbsp raw cacao powder
3-4 Tbsp maple syrup
2 tsp vanilla
1 Tbsp melted coconut oil
1/3 cup nut milk
pinch of salt
1, Add hazelnuts to food processor and process until it starts to become sticky. Then add remaining ingredients and process until smooth.
2. You may need to wet your hands for this step, but roll the mixture into balls and place a whole hazelnut in the center of them. Place in freezer for at least 30 minutes until hardened and easier to work with.
3. Melt a chocolate bar of choice with 1 tsp coconut oil until smooth. Dip each ball into the melted chocolate & then roll in chopped hazelnuts. Place back in freezer until ready to enjoy!
