Chocolate Covered Salted Caramel Chews
Keeping things short over on my end today, because this recipe needs to be made like, NOW. These are definitely on my top 5 favorite recipes list as they’re not only painfully easy, but they are ADDICTING. I promise you, you won’t be disappointed!
They’re also incredibly versatile and you can easily mix and match ingredients to your own preferences. I have made these with almost every nut or seed butter you can think of and they have ALWAYS turned out amazing. Let me know which variations you try, if you decide to switch them up! And enjoy!
Ingredients:
2 cups Medjool Dates
2 tablespoons Nut Butter of your choice
1 teaspoon Vanilla
Any ad-ins of choice (Chopped nuts, spices, etc. Have fun!)
1 chocolate bar of choice
1 tbsp coconut oil
Blend the dates, nut butter, vanilla, and sea salt in a food processor until completely smooth. You can add 1 tbsp fo nut milk at a time if needed, to get the consistency of caramel.
f you’re adding anything extra, stir it in at this point, then press the mixture into a parchment-lined pan. You can use any pan size you desire, just keep in mind that the size will decide the thickness of the caramels.
Place in the freezer to Harden.
Once your caramels have hardened, melt the chocolate and coconut oil together until smooth.
Cut the caramels into bite-sized pieces and dip each one in the chocolate mixture and place on cookie sheet. At this point, I love topping them with chunky flakey sea salt.
Once all caramels have been dipped, place back in the freezer to Harden.
