Pecan Pie Caramel Chews

So you guys know my love for a good raw salted caramel. I love making salted caramel chews to have for the week as a sweet treat as they’re such an easy prep, require minimal ingredients and time, and keep in the freezer for ages. Not to mention, how versatile they are. You can literally switch them up, use different ingredients, and add in different goodies to create virtually any flavor you desire.

One of my latest, has probably got to be my favorite thus far! These pecan pie chews were delicious and significant other approved, so you KNOW they’re a winner. I started thinking my house was haunted, as they’d slowly start disappearing from the freezer. Come to find out, it was just my sticky-fingers of a boyfriend trying to hide the fact he was devouring them..

These are the perfect flavor to have around for the holidays as well! Let me know if you try them, how you like them, or how you switch them up! Enjoy!

Ingredients:

  • 2 cups dates

  • 3 tbsp Legendary Foods Pecan Pie Butter (You can use plain pecan butter or sub another nut butter)

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 1/4 tsp sea salt

  • 1/4 cup chopped pecans

  • 1 Chocolate bar of choice

  • 1 tbsp coconut oil

How to:

  1. Combine the dates, nut butter, vanilla, salt, and cinnamon in a food processor and process until smooth. You can add 1 tbsp of nut milk or 1 tsp of coconut oil to get things moving along if your mixture is too thick.

  2. Once the mixture resembles a thick caramel consistency, add in the chopped pecans and stir. Press into the bottom of a prepared pan and place in the freezer to set.

  3. Once set, cut the caramels into small bite-size pieces.

  4. melt your chocolate and coconut oil together until smooth.

  5. Dip each square into the chocolate and set on a parchment-lined baking sheet. Place back in the freezer to set.

  6. Keep these stored in the freezer and Enjoy!
