No Bake Pumpkin Peanut Butter Bars
I am all for a quick and easy treat, especially with the seemingly crazy busy days I have been having the last few weeks. I am not the biggest meal-pepper, however, I love having a good treat on hand at all times. When the cravings hit, it’s nice to be able to reach into the fridge or freezer and grab something that will curb my cravings and satisfy me, but is also a healthier option than something else I might have available to me.
These are super versatile! You can definitely sub out whatever you desire. Don’t do peanut butter? Try it with any other nut butter! Don’t like pumpkin? Completely omit it! They’re also amazing, adding in mix-ins ( think chocolate chips, chopped nuts, etc.)

What you need:
1 cup peanut butter (or nut butter of choice)
1 tbsp pumpkin puree
1/3 cup maple syrup
2 tsp pumpkin pie spice
1/2 cup coconut flour
How to:
Combine the peanut butter, puree, pumpkin spice, and maple syrup until completely smooth. Then, stir in the coconut flour.
Press into the bottom of prepared pan.
Melt the chocolate and coconut oil together until smooth. Pour over top of the peanut butter layer.
Place in the freezer to set. Cut into squares and try not to eat them all ;)
