Peppermint Granola Fudge

I am a sucker for all things peppermint and all things fudge. So when we combine the two, it comes as no surprise, that it creates my favorite kinds of treats. With the holidays around the corner, I have been so excited for all things peppermint.

I have had a favorite fudge recipe for along time now, but played around with it the other night and came up with this recipe that I could not be more excited about. This fudge melts in your mouth, has the perfect punch of peppermint, and has a surprise little crunch on the inside. The granola is obviously optional, but a fun touch! Feel free to switch it up and have fun with this recipe as it is incredibly versatile!

Ready for the most addicting, easiest, and fastest fudge you’ll ever make? Here we go!

Ingredients:

1/3 cup coconut oil

1 cup cashew butter (or nut butter of choice)

1 1/4 tsp peppermint extract

Pinch of sea salt

1/4 cup maple syrup

1/4 cup raw cacao powder

1/4-1/2 cup granola* (see note)

How to:

  1. In a microwave safe bowl, combine the nut butter and coconut oil. Microwave for increments of 20 seconds, stirring in between, until the mixture is completely smooth.

  2. Combine the rest of the ingredients, besides granola, and mix until completely smooth.

  3. Then, add in the granola and give it a stir to evenly distribute it about the mixture.

  4. Pour into a lined loaf pan and place in the freezer until set, then slice into pieces.

  5. OPTIONAL: To make the magic shell drizzle topping, combine equal parts cacao, melted coconut oil, and maple syrup. Stir until combined. Drizzle over the pieces and sprinkle with a little extra granola. Enjoy!

*I used the brand Safe + Fair as their holiday flavored granolas are amazing. This peppermint candy cane one worked perfectly and you can receive a little discount by using dani10 . Feel free to use any sort of granola you like or you can completely omit it. For paleo, try subbing chopped nuts - just as delicious!
