Air Fryer Spicy Peanut Tofu Bowls
I grew up with a mother that was obsessed with all things peanut butter. This woman made peanut butter chicken on REPEAT to the point that when I was old enough to start cooking for myself, I swore I would never eat it again.. Thanks mom!
However.. as the years have gone on and my tastebuds have, dare I say “matured”, I have ventured out of my realm and experienced with different flavors. I recently received an air fryer as a gift and it has completely changed the tofu game for me. It makes it INCREDIBLE. Even my boyfriend, who has always been iffy about this source of protein, LOVES every way I have made it using this amazing device! He too, has always been a fan of peanut chicken. Since cutting chicken from our diets, I promised I would find a way to incorporate it back into our diets. Hence… the tofu. Peanut tofu is actually an incredible flavor combination. It pairs extremely well together, and as I mentioned, making it in the air fryer just makes it 10x better!
Its crispy., full of flavor, and pairs perfectly with a big bowl of roasted vegetables and rice. So, if you’re a peanut chicken fan, definitely give this a go!
Peanut Sauce:
3 tbsp peanut butter
2 tbsp rice vinegar
2 Tbsp lime juice
1 Clove garlic
1 Tbsp liquid aminos
1/2 tbsp maple syrup or stevia
1 tbsp sriracha
For the Coating:
Take 1/2 cup garbanzo bean flour (coconut, cornmeal, or almond all work) & add seasonings of choice. I like to add garlic & onion powder, smoked paprika, curry seasoning, nutritional yeast, etc. Add a tablespoon of water at a time, mixing well, until a liquidy paste forms.
In a separate bowl, combine your crispy coating of choice. You can use panko, or another breadcrumb, or do as I did and use nuts processed finely in a food processor. I use walnuts & they always end up amazing.
Cut tofu into cubes. Dip each cube in the flour paste & then into the crispy coating. Place in the air fryer (or oven or fry on stovetop) at 400 for around 10-15 minutes, flipping half way through. Time varies, especially depending on how crispy you want them.
Once they are cooked to your liking, combine sauce ingredients in a bowl and toss the fried cubes in the sauce. Plate as desired with roasted vegetables, rice, noodles, etc!
